Healthy Chocolate Zucchini Bread Recipe

Ingredients
  

  • 1 1/2 cups whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1/2 cup melted coconut oil or neutral oil
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 1/2 cups shredded zucchini, lightly squeezed
  • 1/2 cup dark chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment. Whisk flour, cocoa, baking soda, baking powder, and salt.
  2. Beat eggs, maple syrup, and applesauce until smooth. Whisk in oil and vanilla.
  3. Pour wet into dry, stir until just combined, then fold in zucchini and chocolate chips.
  4. Scrape batter into pan, top with extra chips, and bake 50 to 55 minutes until a toothpick comes out with moist crumbs.
  5. Cool in pan 10 minutes, then lift out and cool completely on a rack before slicing.

Notes

Letting the bread rest overnight deepens the chocolate flavor, so do not hesitate to make it a day ahead. If you forget to squeeze the zucchini, the bread may turn out gummy, so a quick press over the sink makes all the difference.
