- Heat the oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 to 7 minutes until softened. Stir in garlic and cook 30 seconds.
- Add broth, bay leaf, and thyme. Bring to a boil then reduce to a low simmer and cook 10 minutes.
- Add egg noodles and cook according to package directions, about 6 to 8 minutes, until tender.
- Turn off heat. Stir in chicken and lemon juice, season with salt and pepper, and let sit 2 minutes. Ladle into bowls and serve hot.
Notes
If you have extra time, making your own broth adds a deeper, richer flavor. For a thicker soup, you can add a few extra noodles or a small handful of tiny pasta shapes like stelline.
