Healthy Buffalo Chicken Dip Recipe

Ingredients
  

  • 2 cups shredded cooked chicken breast
  • 1 cup 2% plain Greek yogurt
  • 1/2 cup low-fat cottage cheese, blended smooth
  • 1/3 cup Frank’s RedHot Original sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 1/2 cups shredded reduced-fat sharp cheddar cheese, divided
  • 2 green onions, green parts only, sliced thin
  • Celery sticks and tortilla chips for serving

Method
 

  1. Preheat oven to 375°F (190°C). Stir yogurt, cottage cheese, hot sauce, garlic powder, and onion powder into a smooth base.
  2. Fold in the chicken and 1 cup of the cheddar until combined.
  3. Transfer to an 8-inch cast-iron skillet, top with remaining 1/2 cup cheddar, and bake 22 to 25 minutes until bubbly and golden.
  4. Let sit 3 minutes, top with green onions, swirl gently, and serve warm with celery and chips.

Notes

If you don’t have an immersion blender, puree the cottage cheese in a standard blender with a splash of the hot sauce to help it move. The dip is best hot from the oven; extended sitting can cause the yogurt to release a little liquid, but a quick reheat brings it right back together.
