- Heat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment. In a large bowl, mash the bananas until mostly smooth.
- Stir in the melted coconut oil, maple syrup, eggs, Greek yogurt, and vanilla until combined.
- Sprinkle the flour, baking soda, salt, and cinnamon over the wet mixture. Fold gently just until no dry streaks remain, then fold in the walnuts or chocolate chips if using.
- Pour the batter into the prepared pan and bake for 45 to 55 minutes, until a toothpick inserted in the center comes out with moist crumbs.
- Cool in the pan for 10 minutes, then lift out and cool on a wire rack at least 20 minutes before slicing.
Notes
This bread tastes even better the next day, so it is a great make-ahead bake. If you skip the chocolate and walnuts, the loaf still holds its own without any add-ins. Freeze whole or in slices for easy weekday breakfasts.
