Ingredients
  

  • 6 medium apples
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 cup old-fashioned rolled oats
  • ½ cup whole wheat flour
  • ⅓ cup coconut oil, melted
  • ¼ cup maple syrup
  • Pinch of salt
  • Pinch of cinnamon for topping

Method
 

  1. Preheat oven to 375°F (190°C). Slice apples into ¼-inch wedges, then toss in a baking dish with lemon juice, cornstarch, and cinnamon.
  2. In a bowl, stir oats, flour, maple syrup, melted coconut oil, cinnamon, and salt until clumpy.
  3. Spread topping loosely over the apples without packing down. Bake 35 minutes until bubbling and golden.
  4. Cool 10 minutes, then scoop into bowls and serve warm.

Notes

Let the crisp rest for 10 minutes after baking so the filling thickens and won’t run. If you prefer a sweeter topping, add an extra tablespoon of maple syrup without changing the texture.
