Ingredients

  • 8 oz elbow macaroni
  • 1 cup diced thick-cut deli ham
  • 1 cup canned pineapple tidbits, drained (reserve 2 tbsp juice)
  • 1/2 cup mayonnaise
  • 2 tbsp reserved pineapple juice
  • 1 tbsp apple cider vinegar
  • 1 tsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded carrot
  • 1/2 cup diced celery
  • 1/4 cup thinly sliced green onion

Method

  1. Cook macaroni in salted boiling water until al dente, about 8 minutes. Drain, rinse with cold water until cool, and let drain well.
  2. In a large bowl, whisk together mayonnaise, reserved pineapple juice, vinegar, sugar, salt, and pepper until smooth.
  3. Add cooled pasta, ham, pineapple, carrot, celery, and green onion. Fold until everything is coated. Cover and refrigerate at least 30 minutes.
  4. Stir the salad, add extra salt or vinegar to taste, then garnish with additional green onion. Serve cold.

Notes

If the salad seems dry after chilling, stir in a spoonful of mayo or milk. This dish is best served cold and tastes even better the next day.
