- Whisk together the pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, and sesame oil until the sugar dissolves.
- Place the chicken in a resealable bag or shallow dish. Pour the marinade over, turn to coat, and refrigerate for 30 minutes to 4 hours.
- Preheat a grill to medium-high heat (400°F). Remove the chicken from the marinade and reserve the liquid in a small saucepan.
- Grill the chicken skin-side down for 6 to 7 minutes. Flip and cook another 6 to 7 minutes, or until the internal temperature reaches 165°F. Meanwhile, boil the reserved marinade for 2 minutes and baste the chicken during the last minute of grilling.
- Rest the chicken on a cutting board for 5 minutes, then slice against the grain and serve with the boiled marinade spooned over the top.
Notes
For the deepest flavor, use fresh pineapple juice and marinate the chicken for the full 4 hours. The sugar in the marinade can cause occasional flare-ups on the grill; just move the chicken away from the flames and keep the lid handy.
