Ingredients

  • 1 cup pineapple juice
  • 1/2 cup packed light brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • A small pinch of red pepper flakes (optional)

Method

  1. Whisk the pineapple juice, brown sugar, soy sauce, ketchup, rice vinegar, garlic, ginger, and red pepper flakes in a saucepan until the sugar dissolves.
  2. Bring to a simmer over medium heat, then reduce to medium low. Cook for 8 to 10 minutes, stirring often, until the sauce thickens and coats the back of a spoon.
  3. Remove from heat and brush onto grilled chicken, ribs, or tofu while warm, or let cool and pour into a jar.

Notes

Stop simmering when the sauce looks slightly looser than you want the finished consistency to be, it thickens noticeably as it cools. If you are making this ahead, cool it completely before refrigerating.
