- Whisk together pineapple juice, soy sauce, ketchup, brown sugar, garlic, ginger, and vinegar. Reserve 1/3 cup for basting.
- Pat chicken dry, season lightly with salt, and grill over medium-high (400°F) for 5 minutes per side, brushing with the reserved sauce.
- Pour the remaining sauce into a saucepan over medium heat. Whisk in a slurry of cornstarch and cold water and cook until thickened, about 2 minutes.
- Transfer chicken to a platter, spoon the thickened glaze over the top, and serve with grilled pineapple and green onions.
Notes
If using bone-in chicken, increase cook time by 15 to 20 minutes and brush with sauce only in the last 10 minutes so it chars instead of burns. The chicken slices cleanly after a short rest.
