Method
- Cream the 1 cup butter and 1 ¼ cups sugar until pale and fluffy, about 2 minutes.
- Mix in the 1 egg and 2 teaspoons vanilla until combined.
- Add the 2 ½ cups flour, 1 ½ teaspoons baking powder, and ½ teaspoon salt, mix just until flour disappears, then fold in ½ cup sprinkles.
- Scoop dough by the tablespoon, place on lined sheets, and bake at 350°F for 10 to 12 minutes until edges are set and bottoms are golden. Cool on the sheet for 5 minutes.
- Transfer cookies to a rack, press extra sprinkles on top if you like, and serve.
Notes
If the dough feels sticky, a 20-minute chill in the fridge makes it easier to handle. For the brightest look, use fresh rainbow jimmies from a new package.
