- Preheat oven to 350°F (175°C) and line an 8 or 9 inch round pan with parchment. Whisk flour, baking powder, and salt. Beat butter and sugar until fluffy, add eggs and vanilla, then alternate adding dry ingredients and milk. Stop when combined.
- Spread batter in pan and bake 28-32 minutes until a toothpick comes out with a few moist crumbs. Cool 10 minutes in pan, then turn out onto a rack and cool completely.
- Beat butter for buttercream until pale, gradually add icing sugar, milk, vanilla, and salt. Beat on high until light. Reserve a small amount and tint green, tint the rest pink.
- Pile pink buttercream on the cooled cake and spread in uneven swirls. Pipe green frosting in loose, wobbly letters spelling “Happee Birthdae Harry” across the top.
Notes
Let the cake cool for at least one hour before frosting, any warmth will melt the buttercream. If the green lettering feels too thick, add a drop of milk to loosen it to a pipeable consistency.
