- Heat olive oil in a skillet over medium heat. Add onion and a pinch of salt and cook until soft, about 5 minutes. Stir in garlic, chili powder, cumin, and smoked paprika, and cook 1 minute more.
- Transfer onion mixture to a 6-quart slow cooker. Add sweet potatoes, black beans, kidney beans, tomatoes with juices, tomato paste, chipotles and adobo sauce, salt, and vegetable broth. Stir well.
- Cover and cook on low for 7 to 8 hours, until sweet potatoes are fork-tender.
- Stir in lime juice, taste and adjust salt. Ladle into bowls and top with avocado, cilantro, sour cream, and tortilla chips.
Notes
If you prefer a thicker chili, remove the lid for the last 30 minutes on high. The chili holds well on the “warm” setting for a few hours, so it’s great for a party.
