- Combine the beef, breadcrumbs, egg, 1 1/2 teaspoons of the Worcestershire sauce, garlic powder, 1/2 teaspoon salt, and pepper. Mix gently and shape into 4 oval patties, about 3/4 inch thick.
- Heat oil in a large skillet over medium-high heat. Sear the patties for 4 to 5 minutes per side until deeply browned, then transfer to a plate.
- Melt the butter in the same skillet. Add the onion and mushrooms and cook, stirring, until softened and golden, about 5 to 6 minutes.
- Sprinkle the flour over the vegetables and stir for 1 minute. Slowly whisk in the beef broth and the remaining 1 1/2 teaspoons of Worcestershire. Simmer until the gravy thickens, about 5 minutes. Taste and season with salt and pepper.
- Return the patties to the skillet. Spoon gravy over the top and heat through for 2 to 3 minutes. Serve immediately with extra gravy.
Notes
For the tenderest patties, chill them for 15 minutes before searing, but it’s not a deal breaker. If the gravy tightens up too much as it sits, stir in a splash of warm broth to loosen it.
