Ingredients

  • 1 lb ground beef (85/15)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp Worcestershire sauce, divided
  • 1 small yellow onion, finely chopped
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp chopped fresh parsley

Method

  1. Combine beef, salt, pepper, garlic powder, onion powder, and 1 tbsp Worcestershire sauce. Shape into 4 oval patties about ¾ inch thick.
  2. Sear patties in a hot skillet over medium-high heat, about 4 minutes per side, until deeply browned. Transfer to a plate.
  3. Melt butter in the skillet, cook onion for 4 minutes until soft. Stir in flour for 1 minute, then whisk in beef broth and remaining 1 tbsp Worcestershire sauce. Simmer 3 minutes until thickened.
  4. Return patties to the skillet, spoon gravy over them, and simmer 10 minutes. Serve over mashed potatoes with parsley.

Notes

The patties will not be fully cooked after searing; they finish in the gravy, which keeps them tender. Let the dish rest for a minute or two off the heat before serving so the gravy thickens just a bit more.
