- Brown the ground beef with onion, half the salt, and half the pepper in a skillet over medium-high heat until no longer pink, about 7 minutes. Add garlic for the last minute. Drain fat.
- Boil egg noodles in salted water until al dente, 6 to 7 minutes, then drain.
- In a large bowl, whisk together the soup, drained tomatoes, sour cream, 1 cup cheese, garlic powder, remaining salt, and remaining pepper. Fold in beef and noodles. Transfer to a greased 9x13-inch dish.
- Preheat oven to 375°F (190°C). Top with remaining 1 cup cheese. Bake 25 minutes until bubbly and cheese is lightly golden.
- Let rest 5 minutes, then scoop and serve hot.
Notes
This recipe doubles easily for a crowd; use a larger dish and add about 10 minutes to the bake time. If you prefer a crunchy top, sprinkle buttered breadcrumbs over the cheese before baking.
