- Brown the ground beef in a large Dutch oven over medium-high heat, 5 to 7 minutes. Remove beef and set aside, leaving 1 tbsp fat in the pot.
- Reduce heat to medium, add olive oil, onion, and carrots. Cook 5 minutes until softened. Stir in garlic, cook 1 minute. Add tomato paste and thyme, cook 1 minute.
- Return beef to pot. Add cabbage, diced tomatoes with juices, beef broth, Worcestershire sauce, 1/2 tsp salt, and 1/4 tsp pepper. Bring to a boil, then reduce to a simmer, cover, and cook 20 to 25 minutes until cabbage is tender.
- Taste and adjust salt and pepper. Ladle into bowls and top with fresh parsley if using. Serve hot.
Notes
The soup tastes even better the next day, so feel free to make it ahead. If the broth thickens after refrigeration, just add a splash of water or broth when reheating. For a spicier bowl, add a pinch of red pepper flakes with the thyme.
