Ham and Noodle Casserole Recipe

Ingredients
  

  • 8 oz wide egg noodles
  • 2 cups diced cooked ham
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup low-sodium chicken broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup frozen peas
  • Salt and black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tbsp melted butter

Method
 

  1. Preheat oven to 375°F (190°C). Cook noodles in salted boiling water 1 minute less than package directs, about 6 minutes. Drain.
  2. Melt butter in a saucepan over medium heat. Whisk in flour, cook 1 minute. Slowly pour in milk and broth, whisking constantly, and cook until thickened, about 3 minutes. Stir in cheese a handful at a time until smooth.
  3. Combine drained noodles, ham, peas, and cheese sauce. Fold to coat, then transfer to a greased 9x13-inch baking dish.
  4. Toss panko with melted butter until evenly moistened and sprinkle over casserole.
  5. Bake 20-25 minutes until bubbly. Broil 2-3 minutes for a deeper golden top if you like. Rest 5 minutes, then serve warm.

Notes

If your ham is very salty, go light on added salt in the sauce. The casserole will keep thickening as it cools, so the first scoop is extra creamy.
