Ingredients
  

  • ½ lb thinly sliced beef
  • 1 small onion, sliced
  • ½ cup dashi
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sugar
  • 1 tsp sake (optional)
  • 2 cups cooked short‑grain rice
  • Optional garnishes: beni shoga, green onion, sesame seeds, soft‑boiled egg

Method
 

  1. Combine the dashi, soy sauce, mirin, sugar, and sake in a skillet. Bring to a gentle simmer over medium heat.
  2. Add the onion and cook for 2 minutes until softened. Add the beef, separate the slices, and simmer for 3 to 4 minutes until the beef is just cooked.
  3. Divide the rice between two bowls, spoon the beef and broth over the top, garnish, and serve immediately.

Notes

Using very cold or partially frozen beef makes it much easier to slice paper‑thin. If you cook the rice from scratch, start it first and it will finish right about the time the beef is ready.
