- Cook the rice according to package directions, then keep it warm.
- In a small bowl, whisk the soy sauce, mirin, brown sugar, and rice vinegar. In a separate tiny bowl, stir the cornstarch with 2 tsp cold water to make a slurry.
- Heat a large skillet over medium-high heat. Brown the ground turkey, breaking it up, for about 5 minutes until no pink remains. Add the garlic and ginger, cook 30 seconds, then pour in the sauce and slurry. Simmer 2 to 3 minutes until thickened and glossy. Off the heat, stir in the sesame oil.
- Steam the broccoli in a microwave-safe bowl with a tablespoon of water, covered, for 2 to 3 minutes until bright green and tender-crisp.
- Divide rice into bowls, top with the glazed turkey and broccoli, and garnish with sesame seeds and green onions.
Notes
The sauce continues to tighten as it sits, so if you’re holding the turkey for more than a few minutes, stir in a tablespoon of water before serving. Leftovers reheat really well, making this a solid lunch the next day.
