Ground Turkey Taco Soup Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey (93/7 lean)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp taco seasoning
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 4 cups low-sodium chicken broth
  • salt and pepper to taste
  • Toppings (optional): shredded cheddar, sour cream, diced avocado, tortilla chips, chopped cilantro, lime wedges

Method
 

  1. Brown the ground turkey in olive oil over medium-high heat until no pink remains, about 6 to 8 minutes.
  2. Reduce heat to medium, add onion and bell pepper, and cook until soft, 5 minutes. Stir in garlic and tomato paste, cooking 1 minute more.
  3. Add taco seasoning, tomatoes, beans, corn, and broth. Bring to a boil, then simmer uncovered for 15 minutes. Season with salt and pepper.
  4. Ladle into bowls and top with cheese, sour cream, avocado, chips, cilantro, and lime as you like.

Notes

The soup thickens as it sits, so if you are making it ahead, you may want to thin it with a little extra broth when reheating. All the toppings are optional, but a squeeze of lime really brightens the bowl.
