Ingredients
  

  • 1 lb ground turkey
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 1 cup salsa
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 2 cups shredded Monterey Jack or Mexican blend cheese
  • 2 cups crushed tortilla chips

Method
 

  1. Preheat oven to 400°F (200°C). In a large skillet over medium-high heat, cook ground turkey, breaking it into crumbles, until browned, 5 to 7 minutes. Stir in taco seasoning and 1/4 cup water; cook 1 minute.
  2. Stir in salsa, black beans, and corn. Simmer for 2 to 3 minutes until heated through.
  3. In a 2-quart baking dish, layer half the crushed chips, half the turkey mixture, and half the cheese. Repeat with the remaining chips, meat, and cheese.
  4. Bake uncovered for 15 to 18 minutes until the cheese is melted and bubbly. Let rest 5 minutes, then serve with sour cream, avocado, or cilantro.

Notes

The casserole sets up nicely after a brief rest, making it easier to portion. For a crispier top, pop it under the broiler for 1 minute right before serving. Leftovers reheat beautifully and taste just as good the next day.
