- Preheat oven to 400°F (200°C). In a large skillet over medium-high heat, cook ground turkey, breaking it into crumbles, until browned, 5 to 7 minutes. Stir in taco seasoning and 1/4 cup water; cook 1 minute.
- Stir in salsa, black beans, and corn. Simmer for 2 to 3 minutes until heated through.
- In a 2-quart baking dish, layer half the crushed chips, half the turkey mixture, and half the cheese. Repeat with the remaining chips, meat, and cheese.
- Bake uncovered for 15 to 18 minutes until the cheese is melted and bubbly. Let rest 5 minutes, then serve with sour cream, avocado, or cilantro.
Notes
The casserole sets up nicely after a brief rest, making it easier to portion. For a crispier top, pop it under the broiler for 1 minute right before serving. Leftovers reheat beautifully and taste just as good the next day.
