Ground Turkey Taco Bowl Recipe

Ingredients
  

  • 1 cup long-grain white rice
  • 1 lb ground turkey
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • Black pepper, a few grinds
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 1 lime, halved
  • ¼ cup chopped fresh cilantro
  • Shredded iceberg lettuce
  • 1 large tomato, diced
  • 1 ripe avocado, diced
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup sour cream
  • Salsa or hot sauce, to taste

Method
 

  1. Rinse rice, then cook with 2 cups water and a pinch of salt. Bring to a boil, cover, and simmer 15 minutes. Rest 5 minutes off heat. Fluff, add cilantro, and squeeze juice from half the lime.
  2. Heat 1 tbsp oil in a large skillet over medium-high. Brown turkey, breaking it up, for 7 to 8 minutes. Stir in all spices and cook 1 minute more.
  3. Push turkey to one side, add remaining 1 tbsp oil, and add beans and corn. Cook 2 to 3 minutes, stirring occasionally. Season with salt and a squeeze from the remaining lime half.
  4. Stir sour cream with lime juice and a pinch of salt until smooth and pourable.
  5. Divide rice among bowls, top with turkey mixture, lettuce, tomato, avocado, cheese, crema, and salsa. Serve immediately.

Notes

The rice gets a quick rest while you finish the turkey; that time is included in the total. Feel free to use pre-cooked rice or a grain of your choice to speed things up even more.
