Ground Turkey Sweet Potato Skillet Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 3 cups diced sweet potato
  • 1 lb ground turkey
  • ½ medium yellow onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • ½ cup corn kernels
  • ½ cup chicken broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and black pepper
  • 2 cups baby spinach (optional)
  • Fresh cilantro, lime wedges, and sliced avocado for serving

Method
 

  1. Heat oil in a large skillet over medium-high heat. Cook sweet potato, stirring occasionally, for about 8 minutes until edges brown and soften.
  2. Push sweet potato to one side; add turkey, onion, bell pepper, and garlic. Cook 6 minutes, breaking up meat, until turkey is no longer pink.
  3. Stir in tomatoes with their juice, beans, corn, broth, chili powder, cumin, paprika, salt, and pepper. Bring to a simmer, cover, and cook 10 minutes until sweet potatoes are tender.
  4. Remove from heat. Stir in spinach if using and let wilt. Squeeze lime, top with cilantro and avocado, and serve.

Notes

The sweet potato dice size really matters here: keep it to half-inch pieces so they cook through in the time the rest of the skillet finishes. If you only have larger chunks, add a few extra minutes of covered cook time and an extra splash of broth.
