- Preheat oven to 375°F (190°C). Sauté onion in oil over medium heat for 4 minutes, then add garlic and cook 1 minute more.
- Add turkey to the skillet, cook undisturbed for 2 minutes, then break it apart and cook 5 minutes until no pink remains.
- Off heat, stir in rice, ricotta, tomato sauce, Italian seasoning, salt, and pepper. Mix well and taste for seasoning.
- Halve peppers lengthwise, remove seeds, and arrange cut-side up in a 9x13-inch dish. Spoon filling into each half, mounding it.
- Top with mozzarella, add 2 tbsp water to the dish, cover with foil, and bake 20 minutes. Uncover and bake 10 to 15 minutes more until cheese is bubbly and peppers are tender. Rest 5 minutes before serving.
Notes
Allowing the peppers to rest out of the oven for a few minutes keeps the molten cheese from sliding right off when you plate them. The recipe doubles easily in two dishes or one large roasting pan; just rotate the pans halfway through baking if your oven has hot spots.
