Ground Turkey Stuffed Peppers Recipe

Ingredients
  

  • 6 medium bell peppers, any color
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 lb lean ground turkey
  • 1 cup cooked white or brown rice
  • 1/2 cup whole-milk ricotta cheese
  • 1 cup plain tomato sauce or passata
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella

Method
 

  1. Preheat oven to 375°F (190°C). Sauté onion in oil over medium heat for 4 minutes, then add garlic and cook 1 minute more.
  2. Add turkey to the skillet, cook undisturbed for 2 minutes, then break it apart and cook 5 minutes until no pink remains.
  3. Off heat, stir in rice, ricotta, tomato sauce, Italian seasoning, salt, and pepper. Mix well and taste for seasoning.
  4. Halve peppers lengthwise, remove seeds, and arrange cut-side up in a 9x13-inch dish. Spoon filling into each half, mounding it.
  5. Top with mozzarella, add 2 tbsp water to the dish, cover with foil, and bake 20 minutes. Uncover and bake 10 to 15 minutes more until cheese is bubbly and peppers are tender. Rest 5 minutes before serving.

Notes

Allowing the peppers to rest out of the oven for a few minutes keeps the molten cheese from sliding right off when you plate them. The recipe doubles easily in two dishes or one large roasting pan; just rotate the pans halfway through baking if your oven has hot spots.
