Ingredients

  • 1 tbsp vegetable oil
  • 1 lb ground turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp minced fresh ginger
  • 1 red bell pepper, sliced
  • 2 cups small broccoli florets
  • 1 medium carrot, cut into matchsticks
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 tsp toasted sesame oil
  • 2 green onions, sliced
  • 1 tsp sesame seeds

Method

  1. Heat oil in a large skillet over medium-high heat. Brown ground turkey, breaking it apart, until cooked through, 5 to 7 minutes.
  2. Push turkey aside and add onion, garlic, and ginger. Cook 30 seconds, then add bell pepper, broccoli, and carrot. Sauté until tender-crisp, 3 to 4 minutes.
  3. Whisk soy sauce, honey, rice vinegar, cornstarch, and water. Pour into the pan and stir, letting the sauce bubble and thicken, 1 to 2 minutes.
  4. Remove from heat. Drizzle with sesame oil, sprinkle with green onions and sesame seeds, and serve immediately.

Notes

Everything comes together quickly, so have your ingredients prepped and the sauce mixed before you start cooking. Serve as soon as it's ready for the crispest vegetables.
