Ground Turkey Soup Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium yellow onion, chopped
  • 2 medium carrots, peeled and diced small
  • 2 celery ribs, diced small
  • 3 garlic cloves, minced
  • 1 (15 oz) can diced tomatoes, with juices
  • 4 cups low-sodium chicken broth
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 3/4 cup ditalini pasta
  • 1 tsp Italian seasoning
  • 3/4 tsp fine sea salt
  • 1/4 tsp black pepper
  • Fresh parsley and grated parmesan for serving

Method
 

  1. Heat olive oil in a large pot over medium-high. Brown the ground turkey, breaking it up, for about 5 minutes.
  2. Reduce heat to medium. Add onion, carrots, and celery, and cook 4 minutes until softened. Stir in garlic and Italian seasoning for 30 seconds.
  3. Add diced tomatoes, broth, beans, salt, and pepper. Bring to a boil, stir in ditalini, then simmer 10 minutes until pasta is tender.
  4. Remove from heat. Taste and adjust salt. Ladle into bowls and top with parsley and parmesan.

Notes

The pasta will keep absorbing broth as the soup sits, so leftover bowls benefit from a splash of water or broth when reheating. If you plan to freeze a batch, consider cooking the pasta separately and adding it to each serving.
