Ingredients

  • 1 lb ground turkey
  • 1 small onion, finely diced
  • 1 small green bell pepper, finely diced
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 1/2 cup tomato sauce
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 hamburger buns, split and toasted

Method

  1. Heat a large skillet over medium-high. Cook the ground turkey, breaking it up, until no longer pink, about 5-6 minutes. Drain excess liquid if needed.
  2. Add onion and bell pepper; cook until softened, about 4 minutes. Stir in garlic and cook 30 seconds.
  3. Reduce heat to medium-low. Stir in ketchup, tomato sauce, brown sugar, Worcestershire, mustard, smoked paprika, salt, and pepper. Simmer for 10-12 minutes, stirring occasionally, until thick and glossy.
  4. Toast the buns, then pile on the sloppy joe mixture and serve immediately.

Notes

The filling thickens as it cools, so if you’re reheating leftovers, add a splash of water. These taste even better the next day, making them a great meal prep option.
