- Heat a large skillet over medium-high. Cook the ground turkey, breaking it up, until no longer pink, about 5-6 minutes. Drain excess liquid if needed.
- Add onion and bell pepper; cook until softened, about 4 minutes. Stir in garlic and cook 30 seconds.
- Reduce heat to medium-low. Stir in ketchup, tomato sauce, brown sugar, Worcestershire, mustard, smoked paprika, salt, and pepper. Simmer for 10-12 minutes, stirring occasionally, until thick and glossy.
- Toast the buns, then pile on the sloppy joe mixture and serve immediately.
Notes
The filling thickens as it cools, so if you’re reheating leftovers, add a splash of water. These taste even better the next day, making them a great meal prep option.
