- Toss the cucumber with the rice vinegar, 1/2 teaspoon sugar, and a pinch of salt. Let it sit for at least 10 minutes.
- Heat the sesame oil in a large skillet over medium-high heat. Add the ground turkey and cook for 6 to 8 minutes, breaking it up, until no longer pink. Stir in the garlic and ginger and cook 30 seconds. Add the soy sauce, brown sugar, gochujang, and 1 tablespoon water, then cook 2 minutes until glazed.
- Wipe the skillet, add a drizzle of vegetable oil, and fry the eggs over medium heat covered for about 3 minutes, until the whites are set and yolks runny.
- Spoon rice into bowls, top with the turkey, a fried egg, pickled cucumbers, carrot, green onions, and sesame seeds. Serve immediately.
Notes
For a spicier bowl, stir an extra teaspoon of gochujang into the sauce. The pickled cucumbers can be made a day ahead and kept in the fridge. If you prefer a fully set yolk, cook the eggs uncovered for an additional minute.
