Ground Turkey Quesadillas Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 lb 93% lean ground turkey
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 4 large flour tortillas (8-inch)
  • 1 ½ cups shredded Monterey Jack or cheddar cheese
  • Vegetable oil or butter, for the skillet

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Cook the onion until softened, about 3 minutes. Add garlic and cook 30 seconds. Add turkey and cook, breaking it up, until no longer pink, about 5 minutes. Drain, then stir in spices and cook 2 minutes.
  2. Place tortillas on a work surface. Divide filling onto half of each, top with cheese, and fold the other half over. Press down gently.
  3. Wipe the skillet clean and set over medium heat with a thin coating of oil or butter. Cook quesadillas in batches for 2 to 3 minutes per side, pressing with a spatula, until golden and cheese is melted.
  4. Rest 1 minute on a cutting board, then cut into wedges and serve with lime, sour cream, and salsa.

Notes

If you like a little heat, add a pinch of cayenne to the spice blend. Letting the quesadillas rest for a minute off the heat keeps the cheese from gushing out when you slice them.
