- Heat olive oil in a large skillet over medium-high heat. Cook the onion until softened, about 3 minutes. Add garlic and cook 30 seconds. Add turkey and cook, breaking it up, until no longer pink, about 5 minutes. Drain, then stir in spices and cook 2 minutes.
- Place tortillas on a work surface. Divide filling onto half of each, top with cheese, and fold the other half over. Press down gently.
- Wipe the skillet clean and set over medium heat with a thin coating of oil or butter. Cook quesadillas in batches for 2 to 3 minutes per side, pressing with a spatula, until golden and cheese is melted.
- Rest 1 minute on a cutting board, then cut into wedges and serve with lime, sour cream, and salsa.
Notes
If you like a little heat, add a pinch of cayenne to the spice blend. Letting the quesadillas rest for a minute off the heat keeps the cheese from gushing out when you slice them.
