Ground Turkey Pasta Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • ½ tsp salt, plus more to taste
  • ¼ tsp black pepper
  • 1 (28 oz) can crushed tomatoes
  • 2 cups chicken or vegetable broth
  • 8 oz short pasta (penne, rotini, or shells)
  • 3 cups baby spinach, roughly chopped
  • ½ cup grated Parmesan, plus more for serving

Method
 

  1. Heat oil in a large pot over medium-high heat. Crumble in the turkey and sear without stirring for 2 minutes, then break it apart and cook until no longer pink, about 5 to 7 minutes.
  2. Stir in the onion and cook until translucent, 3 to 4 minutes. Add the garlic, Italian seasoning, red pepper flakes if using, salt, and pepper. Cook 1 minute, stirring constantly.
  3. Pour in the crushed tomatoes and broth, scraping up any browned bits. Bring to a boil, add the pasta, reduce heat to medium, and simmer, stirring occasionally, until pasta is tender and sauce thickens, 12 to 15 minutes.
  4. Remove from heat. Stir in the spinach and Parmesan until the spinach wilts and the cheese melts. Taste and adjust seasoning.
  5. Spoon into bowls, top with more Parmesan and black pepper, and serve hot.

Notes

This pasta keeps absorbing liquid after cooking, so serve it immediately for the silkiest texture. If you’re meal-prepping, store the sauce and pasta separately when possible or add a splash of broth when reheating.
