Ground Turkey Meatloaf Recipe

Ingredients
  

  • 1 lb ground turkey (93% lean)
  • 1 cup shredded zucchini
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1/4 cup finely grated onion
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/3 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce
  • Pinch of cayenne pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment. In a large bowl, mix the turkey, zucchini, breadcrumbs, egg, onion, garlic, salt, pepper, and paprika until just combined.
  2. Shape the mixture into a 9x5 inch freeform loaf on the prepared baking sheet.
  3. Whisk the ketchup, brown sugar, Worcestershire, and cayenne. Brush half the glaze over the loaf.
  4. Bake 30 minutes, then brush on the remaining glaze and bake another 15 to 20 minutes, until the center reaches 165°F (74°C).
  5. Rest the meatloaf on a cutting board for 10 minutes. Slice and serve warm with pan juices.

Notes

The zucchini doesn’t need to be squeezed; its water steams the meatloaf from the inside. For a tighter crumb, pack the loaf a bit more firmly when shaping, but avoid overworking the mix.
