Ingredients
  

  • 1 lb ground turkey
  • 1 tbsp vegetable oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp minced fresh ginger
  • 1 (8 oz) can water chestnuts, drained and chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 to 2 tsp sriracha (optional)
  • 1 head butter lettuce, leaves separated
  • 2 scallions, sliced
  • 1 tsp sesame seeds

Method
 

  1. Heat the oil in a large skillet over medium-high heat. Add the turkey and onion; cook, breaking up the meat, until no longer pink, about 5 to 7 minutes. Stir in the garlic, ginger, and water chestnuts; cook 1 minute.
  2. In a small bowl, whisk together the soy sauce, hoisin, rice vinegar, sesame oil, and sriracha.
  3. Pour the sauce into the skillet and stir to coat. Simmer over medium heat for 2 to 3 minutes, until thickened.
  4. Spoon the filling into lettuce leaves, top with scallions and sesame seeds, and serve right away.

Notes

Keep the filling warm while you assemble. Don’t overfill the cups or they’ll be tough to eat. If you need to keep the lettuce extra crisp, set the leaves on a plate lined with a dry paper towel.
