Ground Turkey Lasagna Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tsp Italian seasoning
  • ½ tsp kosher salt, plus more for the cheese mix
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 1 (28-oz) can crushed tomatoes
  • 2 tbsp tomato paste
  • ½ cup whole milk
  • 15 oz ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella
  • ½ cup grated Parmesan
  • ¼ cup chopped fresh basil, plus more for serving
  • 12 no-boil lasagna noodles
  • Cooking spray or extra oil

Method
 

  1. Brown the turkey in oil over medium-high until deep golden, about 8 minutes. Add onion and cook 3 minutes. Stir in garlic, seasonings, tomatoes, tomato paste, and milk. Simmer 10 minutes.
  2. Preheat oven to 375°F (190°C). Mix ricotta, egg, 1 cup mozzarella, Parmesan, and half the basil until just blended. Season with a pinch of salt.
  3. Coat a 9×13-inch dish with spray. Spread a thin layer of sauce, then layer 4 noodles, one-third of the sauce, half the ricotta mixture. Repeat with another 4 noodles, one-third sauce, remaining ricotta. Top with final 4 noodles, last of the sauce, and remaining 1 cup mozzarella.
  4. Cover with foil (sprayed underneath) and bake 30 minutes. Uncover and bake 15 minutes more until golden and bubbly.
  5. Rest the lasagna 10 minutes before slicing and scattering the remaining basil on top.

Notes

Let the lasagna rest for 10 minutes after baking so the layers hold together when you slice. If you want a firmer slice, you can chill the baked and cooled lasagna overnight, then reheat individual squares. All resting and cooling time is extra, not included in the cook time above.
