Ingredients
  

  • 1 lb ground turkey
  • 2 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Zest and juice of 1 lemon
  • 3 cups cooked rice, warm
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • ⅓ cup thinly sliced red onion
  • ¼ cup pitted Kalamata olives, halved
  • ½ cup crumbled feta cheese
  • 1 cup full-fat Greek yogurt
  • ½ cup finely grated cucumber, squeezed dry
  • 1 small clove garlic, grated
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill
  • ¼ tsp kosher salt

Method
 

  1. Make the tzatziki by combining yogurt, squeezed cucumber, garlic, lemon juice, dill, and salt in a bowl. Refrigerate until serving.
  2. Toss the turkey with 1 tbsp olive oil, garlic, oregano, salt, pepper, and lemon zest. Sear in a skillet with the remaining olive oil over medium-high heat until browned and fully cooked, about 10 minutes total. Squeeze the lemon juice over the turkey and toss.
  3. Spoon warm rice into four bowls, top with turkey, then add tomatoes, cucumber, red onion, olives, and feta. Finish with a generous spoonful of tzatziki and serve right away.

Notes

If you have an extra 10 minutes, let the tzatziki sit on the counter while you cook the turkey instead of popping it straight in the fridge. The garlic softens just enough and the sauce thickens a bit as the salt draws out any last moisture.
