Ground Turkey Enchiladas Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 2 cups shredded cheese (Monterey Jack and cheddar mix)
  • 8 corn tortillas
  • 1 can (10 oz) red enchilada sauce
  • Fresh cilantro, for serving
  • Sour cream or Greek yogurt, for serving

Method
 

  1. Heat oil in a skillet, cook onion 3-4 min. Add turkey, garlic, cumin, chili powder, salt; cook 6-7 min until browned. Stir in beans and corn, cook 2 min.
  2. Microwave tortillas wrapped in damp paper towels for 30 sec until pliable.
  3. Preheat oven to 375°F (190°C). Spread 1/4 cup sauce in a 9x13 dish. Fill each tortilla with turkey mixture and a sprinkle of cheese, roll, place seam side down. Top with remaining sauce and cheese.
  4. Bake uncovered 20-25 min until bubbly and golden. Rest 5 min.
  5. Top with sour cream and cilantro, serve immediately.

Notes

Serve with extra warm enchilada sauce on the side if you like a saucier plate. A side of quick-pickled jalapeños adds a nice tang.
