Ground Turkey Enchilada Casserole Recipe

Ingredients
  

  • 1 lb ground turkey
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (15 oz) can red enchilada sauce
  • 1 (4 oz) can diced green chiles
  • 12 corn tortillas (6-inch)
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: sour cream, diced avocado, cilantro

Method
 

  1. Preheat oven to 375°F. Heat oil in a large skillet over medium. Add turkey and cook, breaking it up, until no longer pink, 6 to 8 minutes.
  2. Stir in onion, garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook 2 minutes. Add enchilada sauce and green chiles; simmer 5 minutes.
  3. Spread a thin layer of sauce in a 9x13-inch baking dish. Layer 4 tortillas, half the turkey mixture, and 1 cup cheese. Repeat with 4 tortillas, remaining turkey, and 1 cup cheese. Top with last 4 tortillas and remaining 1/2 cup cheese.
  4. Bake uncovered 20 to 25 minutes, until cheese is melted and bubbly and edges are golden.
  5. Let cool 5 minutes, then slice and serve with sour cream, avocado, and cilantro.

Notes

The casserole needs a 5-minute rest after baking so the layers set, which is not included in the prep or cook time. If you use an 8x8 dish, bake 30 to 35 minutes until the center is hot.
