- Heat the oil in a large skillet over medium-high heat. Brown the turkey, breaking it up, until cooked through, about 5 to 7 minutes. Drain if needed and set aside.
- In the same skillet, cook the onion for 2 to 3 minutes until softened. Add garlic and ginger and cook 30 seconds more.
- Add the coleslaw mix and cook, tossing, for 3 to 4 minutes until the cabbage wilts but still has a little crunch.
- Return the turkey to the pan. Whisk together soy sauce, rice vinegar, sesame oil, honey, and sriracha, pour it over the mixture, and cook 2 to 3 minutes until hot and the sauce is absorbed.
- Spoon into bowls, top with green onions and sesame seeds, and serve immediately.
Notes
If the skillet looks dry after adding the sauce, stir in a tablespoon of water to loosen things up. For extra crunch, sprinkle fried wonton strips on top.
