Ground Turkey Egg Roll in a Bowl Recipe

Ingredients
  

  • 1 tbsp vegetable oil
  • 1 lb ground turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tsp fresh ginger, grated
  • 1 bag (14 oz) coleslaw mix
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp honey
  • 1 to 2 tsp sriracha
  • 2 green onions, sliced
  • Sesame seeds for topping

Method
 

  1. Heat the oil in a large skillet over medium-high heat. Brown the turkey, breaking it up, until cooked through, about 5 to 7 minutes. Drain if needed and set aside.
  2. In the same skillet, cook the onion for 2 to 3 minutes until softened. Add garlic and ginger and cook 30 seconds more.
  3. Add the coleslaw mix and cook, tossing, for 3 to 4 minutes until the cabbage wilts but still has a little crunch.
  4. Return the turkey to the pan. Whisk together soy sauce, rice vinegar, sesame oil, honey, and sriracha, pour it over the mixture, and cook 2 to 3 minutes until hot and the sauce is absorbed.
  5. Spoon into bowls, top with green onions and sesame seeds, and serve immediately.

Notes

If the skillet looks dry after adding the sauce, stir in a tablespoon of water to loosen things up. For extra crunch, sprinkle fried wonton strips on top.
