Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium yellow onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 tbsp tomato paste
  • 1 (15 oz) can fire roasted diced tomatoes, undrained
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 cup low sodium chicken broth

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Add ground turkey and cook, breaking it apart, until no longer pink, about 5 minutes.
  2. Stir in onion, bell pepper, and garlic. Cook until onion turns translucent, about 4 to 5 minutes.
  3. Sprinkle in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir constantly for 1 minute, then stir in tomato paste and cook 30 seconds more.
  4. Pour in diced tomatoes with their juices, kidney beans, and broth. Bring to a gentle boil, then reduce heat to low and simmer, partially covered, for 20 minutes, stirring once or twice.
  5. Taste and adjust salt if needed. Ladle into bowls and serve with toppings like sour cream, shredded cheese, and cilantro.

Notes

The chili will continue to thicken as it cools. If making ahead, you can add a little more broth when reheating to loosen it. For the best texture, do not skip the step of toasting the spices before adding the liquids.
