Ground Turkey Burrito Bowls Recipe

Ingredients
  

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp salt, plus more to taste
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn
  • ½ cup tomato sauce
  • 2 cups cooked white rice
  • For serving: shredded cheese, sour cream, salsa, sliced avocado, chopped cilantro, lime wedges

Method
 

  1. Heat the oil in a large skillet over medium-high heat. Add the turkey, onion, bell pepper, and a pinch of salt. Cook, breaking up the meat, until browned and cooked through, about 7 to 8 minutes. Drain off excess liquid if needed.
  2. Stir in the garlic, cumin, chili powder, smoked paprika, oregano, and garlic powder. Cook for 1 minute until fragrant.
  3. Add the black beans, corn, and tomato sauce. Lower the heat to medium and simmer for 5 minutes, until the sauce thickens slightly. Taste and adjust salt.
  4. Divide the rice among bowls. Top with the turkey mixture and scatter cheese, sour cream, avocado, salsa, cilantro, and a lime wedge. Serve hot.

Notes

If the turkey releases a lot of liquid while browning, drain it off before adding the spices so the mixture isn't watery.
