- Heat the oil in a large skillet over medium-high heat. Add the turkey, onion, bell pepper, and a pinch of salt. Cook, breaking up the meat, until browned and cooked through, about 7 to 8 minutes. Drain off excess liquid if needed.
- Stir in the garlic, cumin, chili powder, smoked paprika, oregano, and garlic powder. Cook for 1 minute until fragrant.
- Add the black beans, corn, and tomato sauce. Lower the heat to medium and simmer for 5 minutes, until the sauce thickens slightly. Taste and adjust salt.
- Divide the rice among bowls. Top with the turkey mixture and scatter cheese, sour cream, avocado, salsa, cilantro, and a lime wedge. Serve hot.
Notes
If the turkey releases a lot of liquid while browning, drain it off before adding the spices so the mixture isn't watery.
