- Boil salted water and cook pasta until al dente, reserving 1/2 cup pasta water before draining.
- While pasta cooks, heat oil in a large skillet over medium-high, brown turkey with salt and pepper until no longer pink, about 6 minutes.
- Reduce heat to medium, melt butter, sauté garlic for 30 seconds, then stir into turkey.
- Pour in cream and broth, simmer for 2 minutes, then turn off heat and toss in pasta and half the Parmesan until coated, adding pasta water as needed.
- Dish into bowls, finish with remaining Parmesan and parsley, and serve immediately.
Notes
Reserve more pasta water than you think you’ll need. The sauce tightens quickly after tossing, and a little starchy liquid brings it right back to a silky consistency without thinning the flavor.
