Ground Chicken Taco Bowls Recipe

Ingredients
  

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • ½ medium onion,diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • ¼ cup water
  • Salt, to taste
  • 2 cups cooked rice
  • 1 cup shredded lettuce
  • ½ cup shredded cheddar cheese
  • ¼ cup salsa
  • 1 avocado, sliced
  • Lime wedges

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook 3-4 minutes, stirring, until softened. Add the garlic and cook 30 seconds, then add the ground chicken. Break it apart with a spoon and cook 5-6 minutes until no longer pink and lightly browned.
  2. Stir in the taco seasoning and water, mixing well. Simmer for 2-3 minutes, stirring occasionally, until the liquid absorbs and the chicken looks glossy and well-coated.
  3. Divide the cooked rice among 4 bowls. Top with the seasoned chicken, shredded lettuce, cheese, salsa, avocado slices, and lime wedges. Serve immediately.

Notes

For saucier meat, add an extra tablespoon of water during the simmer. The taco meat can be made a day ahead and reheated gently with a splash of broth, then piled into fresh bowls.
