Ground Chicken Fried Rice Recipe

Ingredients
  

  • 1 lb ground chicken
  • 2 tbsp vegetable oil, divided
  • 3 cups cooked and cooled white rice, preferably day-old
  • 1 cup frozen peas and carrots
  • 2 large eggs, lightly beaten with a pinch of salt
  • 3 green onions, sliced thin, whites and greens separated
  • 3 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 3 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tsp rice vinegar
  • ½ tsp sugar

Method
 

  1. Heat 1 tbsp oil in a large skillet over medium-high. Brown the ground chicken until crisp and cooked through, about 5 to 6 minutes. Transfer to a plate.
  2. Add remaining oil to the pan. Sauté the green onion whites, garlic, and ginger for 30 seconds until fragrant.
  3. Push aromatics aside and scramble the eggs in the same pan, cooking until just set.
  4. Increase heat to medium-high. Add the cold rice, press it into a single layer, and leave it for 2 minutes to crisp. Stir in frozen peas and carrots and cook 1 minute more.
  5. Return the chicken to the pan. Add soy sauce, sesame oil, rice vinegar, and sugar. Toss for 1 minute until hot and glossy. Garnish with green onion greens and serve.

Notes

For the crispiest texture, spread the rice out and resist the urge to stir too soon. If your rice was heavily salted during cooking, use low-sodium soy sauce to keep the dish balanced.
