Ingredients

  • 1 lb ground chicken
  • 1/4 cup grated yellow onion
  • 1/4 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 2 tbsp mayonnaise
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp neutral oil, for cooking
  • 4 brioche burger buns, split and toasted
  • Toppings: lettuce, tomato, red onion, pickles, sauce

Method

  1. Combine all ingredients except oil and buns in a bowl, gently folding until just mixed.
  2. Shape into 4 equal patties, about 4 inches across, and press a shallow dimple in the center of each.
  3. Heat oil in a skillet over medium. Cook patties 5-6 minutes per side, until browned and 165°F inside.
  4. Toast buns cut-side down in the warm skillet for 1 minute.
  5. Assemble burgers with toppings and serve hot.

Notes

Let the shaped patties chill in the fridge for 10 minutes before cooking if you have the time. It helps them hold together better in the pan.
