Ground Beef Tortellini Recipe

Ingredients
  

  • 1 lb ground beef (85/15)
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 1 (24 oz) jar marinara sauce
  • 1/2 cup low-sodium beef broth
  • 1/3 cup heavy cream
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 10 oz refrigerated cheese tortellini
  • 1/4 cup grated Parmesan
  • Fresh basil leaves, for serving

Method
 

  1. Cook the ground beef in a large skillet over medium-high heat, breaking it up, for about 6 minutes until browned. Season with salt and pepper, then drain excess fat if needed.
  2. Lower heat to medium, push beef aside, and cook the onion for 4 minutes until soft. Stir in garlic and oregano and cook 30 seconds.
  3. Add marinara sauce and beef broth, bring to a simmer, reduce heat to low, and cook for 5 minutes. Taste and adjust salt.
  4. Stir in tortellini, cover, and cook per package time minus 1 minute (4 to 5 minutes). Uncover, add cream and Parmesan, stir until glossy, about 1 minute. Serve with basil and extra Parmesan.

Notes

If you use a particularly thick marinara, add an extra tablespoon of broth to keep the sauce loose enough to cook the tortellini. This dish is best eaten right away while the tortellini are tender and the sauce is creamy.
