- Heat a large skillet over medium-high heat and cook the ground beef and diced onion for 6 to 7 minutes, breaking up the meat, until browned.
- Stir in the garlic, tomato paste, chili powder, cumin, smoked paprika, oregano, and salt, then add the beef broth and simmer for 4 to 5 minutes until thickened.
- Warm the tortillas in a dry skillet for 20 to 30 seconds per side until soft with light char spots.
- Fill the tortillas with the beef, top with cheese, lettuce, tomato, and sour cream, then finish with cilantro and a squeeze of lime and serve warm.
Notes
If you're prepping ahead, cook the beef up to 4 days in advance and just reheat it while the tortillas warm. Taste the seasoning before adding extra salt, since cheese and tortillas both bring sodium of their own.
