- Melt the butter in a large skillet over medium-high heat and brown the ground beef with the diced onion, about 6 to 7 minutes, until no pink remains.
- Add the sliced mushrooms and minced garlic to the skillet and cook about 5 minutes until golden and any liquid has cooked off.
- Sprinkle in the flour and stir 1 minute, then add the beef broth, Worcestershire sauce, and Dijon mustard, bring to a boil, add the egg noodles, and simmer uncovered about 12 minutes until tender.
- Turn off the heat and stir in the sour cream until the sauce is smooth and glossy, then season to taste.
- Sprinkle with fresh parsley and serve hot straight from the skillet.
Notes
If you like a thinner sauce, add an extra 1/4 cup of beef broth when you stir in the sour cream. This dish is best eaten right away while the sauce is still loose, since it thickens quite a bit as it cools.
