- Brown the ground beef in a large skillet over medium-high heat until no pink remains, about 5 minutes, then drain off all but 1 tbsp fat.
- Add chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, pepper, and water. Stir and simmer 3 to 4 minutes until the liquid is gone and the meat is well coated. Cover to keep warm.
- Char the tortillas in a dry skillet over medium-high heat for about 30 seconds per side until they develop dark spots, then wrap in a towel.
- Combine the drained tomatoes, 1/2 small onion, garlic clove, jalapeño, lime juice, 1/4 cup cilantro, and a pinch of salt in a food processor. Pulse until the salsa reaches the texture you like, then taste and adjust salt or lime.
- Stack two warm tortillas per taco, fill with the spiced beef, spoon over the salsa, and top with diced onion, cilantro, and a lime wedge. Serve right away.
Notes
If you want to double-stack your tortillas but find them thin, char them lightly and keep them covered so they steam and soften together. The salsa tastes even better after resting for 10 minutes, but it is ready to pour the moment you blend it.
