- Heat oil in a large skillet over medium-high heat. Crumble in ground beef, spread evenly, and cook undisturbed for 2 minutes, then break up and cook 4-5 minutes more until browned. Spoon off excess fat, leaving about 1 tablespoon.
- Reduce heat to medium, push beef to one side, and cook garlic and ginger for 30 seconds. Add broccoli, bell pepper, and onion; stir and cook 3-4 minutes until vegetables are bright and starting to soften.
- In a small bowl, whisk soy sauce, brown sugar, vinegar, sesame oil, and cornstarch slurry. Pour over beef and vegetables, stirring constantly for 1-2 minutes until sauce thickens and coats everything.
- Remove from heat, give it a final toss, and serve over rice.
Notes
Swap in any crisp vegetables you have—snap peas, carrots, or bok choy all work. Taste the sauce before adding and adjust sweetness to your liking. Leftovers keep well for up to 3 days.
