Ground Beef Skillet Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp kosher salt, divided
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can fire-roasted diced tomatoes, undrained
  • 1 cup frozen corn
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro, for serving

Method
 

  1. Brown the beef in oil with half the salt until crusty, about 6 minutes.
  2. Push beef aside, sauté onion and bell pepper for 4 minutes, then add garlic and cook 30 seconds more.
  3. Stir in chili powder, cumin, and remaining salt; cook 1 minute. Add beans, tomatoes, and corn. Simmer over medium heat for 8 to 10 minutes until thickened.
  4. Remove from heat, stir in lime juice, top with cilantro, and serve.

Notes

Leftovers taste even better the next day. If you plan to reheat, add a fresh squeeze of lime to perk it back up.
