- Gently combine the ground beef, breadcrumbs, egg, 2 teaspoons Worcestershire, onion powder, garlic powder, ½ teaspoon salt, and ¼ teaspoon pepper. Shape into four ¾‑inch‑thick oval patties.
- Heat 1 tablespoon oil in a large skillet over medium‑high. Sear the patties until a deep brown crust forms, about 4 minutes per side, then transfer to a plate.
- Lower heat to medium, melt the butter, and cook the onion with a pinch of salt until softened, about 5 minutes. Add mushrooms and cook until browned, about 4 minutes. Stir in the flour and cook 1 minute. Whisk in the beef broth, remaining 1 teaspoon Worcestershire, and Dijon. Simmer, scraping up fond, until thickened.
- Return patties and any juices to the skillet, spoon gravy over, cover, and simmer over low heat until the patties reach 160°F inside, about 10 minutes. Serve over mashed potatoes, noodles, or rice with parsley.
Notes
The patties finish cooking in the gravy, so do not worry if they look a little pink inside after searing. Leftover gravy is excellent spooned over toast or roasted vegetables the next day. This recipe doubles cleanly; just sear in two batches so the pan stays hot.
